holy cow, i don't think i need to eat again until 2014. localvore, which i mentioned in my last post (with the link, the food was amazingggg, but i'll get back to that), was so much fun. a lot of work, but really, maybe i should get into party planning instead.
most of the initial setup was done last night after the dinner shift ended. this morning, my preceptor (the dining hall dietitian, Rebecca) and i looked around to check if anything needed to be moved. i think it was 120 gallons of vt apple cider were ordered and the setup was not conducive to even holding the amount we would go through during the 3 hour lunch event. so lots of rearranging and then i got to make a display and fill crates with apples! and i mean apples. there were probably about 15 boxes of apples from all around and all varieties, some that i had never even heard of (macoun, macintosh, cortland, lamb abbey, honey crisp, granny smith, gravenstein, wolf river, etc).
so my display was for the stuffed turkey breast, and i got to go hunt down for some of the local items that were used in the recipe (good thing i did the audit ytd so i knew where i could find most things, or at least who i could bug for an answer!) there were 8 wooden crates lined up in the front and then 2 in a "peddlar's cart" by the apple cider that i got to fill continuously throughout the day. and man, those apples were flying out of the baskets. i would walk away for maybe 10 minutes and then they would need to be refilled! i originally had them labeled with the variety, but the leftover boxes i took off the lids and couldn't tell the type, so it all became a mixed party.
so onto the food! it looks kind of deceiving but i guess i sort of retold the story of my caloric intake by not taking pics :)
from the pics, the top left is the atlantic salmon with the quinoa, sunflower sprouts (weird! the hulls are still on), to the right of that are the two paella dishes we used to serve the artichoke & spinach dip and the buffalo cheese dip (so the dip was heated in hotel pans and then poured into the paella dishes and then kept warm with sternos underneath.) the paella pans were monstrous, but very cool. that was served with bagel chips (from elm city bagels) or crackers from Castleton Crackers (so so so good!). below that is the image of the pizza area where we had the lamb with raspberry jam on whole wheat pizza plus dessert pizzas with apples and marscapone sauce (was not a fan). and to the left of that was the apples foster (a bit too on the sweet side, but wish i had thought to just ask for a donut!). i also got 2 cups of the cider (eummmm, can't wait to get hot cider!), lemon blueberry cheesecake, maple walnut cookies, and a "philly cheesesteak" wrap (i am not a fan of fake cheese).
they ran out of apple cider (unbelievable, although they were served in 12 oz cups!) and the bacon cheeseburgers (i think they made over 1300...and i mean, i watched the poor prep guys piling bacon and cheese on top of burgers all day ytd). i did try the fries which were made from local potatoes and prepped in a different way (yum!) but i missed the brussels sprouts and mashed sweet potatoes which i also heard good things about...
man, for the amount i ate i didn't get to everything! but it was so much fun. i got such an adrenaline rush during the whole time as i was rushing out of the print room to get signs up as people were walking in and lots of big people from campus were there. this just makes me wonder how crazy Global Chef will be.
but tmrw is a "rest" day. it's a Healthy Monadnock 2020 day with Laura, so will be much more low-key, too bad i don't get fed though ;)
