end of the week

happy weekend! survived 4 days of clinical! only 51 more to go. haha. everyone at the hospital is really nice, although for such a small place i'm having an incredibly hard time remembering which room patient's are in when i need to do calorie counts and menus.
linda's 2 daughters are also at home (one lives here with her son most of the time). i wanted to try out a recipe i had spotted on pinterest- quinoa pizza crust, which is gluten-free and only needs 5-6 ingredients. it does take a bit of time (8 hours of soaking) so prep it before work or even the night before. i didn't have any pizza pans, so these got a bit cramped in baking sheets and i think the crust got a bit thicker than desired. so aim for a thin spread to get more crunchy/cracker-like crust.

Quinoa Pizza Crust (GF)
Serves 3-4
Time: at least 8 hours

1 1/2 cups dry quinoa
1/2 c water
1 tsp baking powder
1/2 tsp garlic powder
1 tsp salt

Soak quinoa for at least 8 hours in water one to two inches over the top. Rinse and drain quinoa thoroughly.

Preheat oven to 425F. Combine quinoa, water, baking powder, garlic powder and salt in a food processor until the consistency of pancake batter. Line two baking pans (or pizza pans) with parchment paper that has been lightly sprayed with oil. Evenly divide the batter and spread it out thinly. Aim for cracker like thickness. Bake for 10 minutes or until golden brown on the edges. Flip* and then bake for another 10 minutes. Top with ingredients of your choice then bake for another 10 minutes or so.

*To flip, it helped to place another piece of parchment on top and then another baking tray and then flip the trays together.
