i'm home for a mini specialty rotation at a bariatric site so i'm
making it a mini vacay! got home late this afternoon after a pretty
uneventful trip down. only got lost once and somehow also ended going to
the exact same gas station as the last time i headed up to keene! funny
how selective my memory is, no names, but buildings are nicely in place
in my brain somewhere.
trying to resist baking, but who am i kidding. at least i tried healthy stuff this time :)
i'm gonna go back to Greek yogurt in the morning and this time i figured it would be fun to make my own granola instead of just eating plain Chex (not that i have anything against Chex, but sometimes it's nice to mix it up). testing out these recipes. the peanut butter and apricot was adapted from table for two. i just need to make sure that next time i decrease how much apricot jam i put it in and also to bake it for longer so it gets that crunchy texture (it's kind of more granola bar-esque).
Peanut Butter Granola
Makes about 4 cups
4 T creamy peanut butter
3 1/2 T apricot jam (I had no honey, so I thought this might work, would decrease to maybe 2 1/2 b/c it's too sweet and apricoty for my taste)
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
2 cups old fashioned rolled oats
Follow her directions and make sure to bake until they are golden brown, I took them out when they were only lightly golden and they didn't harden up enough.
the great thing aboutn putting them in bags to give away is that it takes the temptation from eating it all up (or at least stops it after you've realized you've eaten half the cooling pan...)
the other one i'm particularly proud of, and it tastes fab-uuuuu. i adapted it from here.
Maple, Almond, Coconut Granola
Makes about 4 cups
2 cups old fashioned oats
1/2 cup unsweetened shredded coconut (I had an organic kind from the Monadnock co-op)
Pinch of salt
1/2 T cinnamon
1/2 cup chopped almonds
1/8 cup canola oil
About 1 T maple syrup + 2 T maple cream (I was working with what was in the house...haha)
1 1/2 tsp vanilla extract (I think I put this much in, the recipe is double and I think I forgot to halve the vanilla extract, but I'll try to make the recipe again to double check)
Follow the directions from the blog. Basically preheat to 300F. Use tin foil or silicon on a pan. Mix all the dry ingredients in a bowl. Mix the wet ingredients then mix all together and spread onto the pan. Bake for 30 minutes or until lightly golden brown (or else your coconut will burn!)
but of course that couldn't be all i bake! b/c that just wouldn't be enough :)
finally tried some recipes from my pinterest board! both of these cookies are from my healthier desserts section. the cookie on the left comes from fitsugar (i love that site). i did half the recipe b/c i wasn't sure if they would taste good.
Healthy Peanut Butter Apricot/Date/Bean Cookie
Makes 24 cookies
1 1/2 cups old-fashioned oats
1/2 heaping cup whole-wheat flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup drained and rinsed Northern white beans
1/4 cup creamy peanut butter
1/3 cup canola oil
1/3 cup packed light brown sugar
1 large egg
1 tsp vanilla extract
1/2 cup chopped dried apricots and dates (tossed lightly in flour so they won't stick)
Follow recipe from blog. Feel free to mash the beans and peanut butter together by hand, esp in a half batch, it's a great arm workout.
the cookie on the right, i'm not sure what i think of it...maybe if i had actually sprayed the aluminum foil and the cookies didn't stick it would be a better cookie. it is a seriously easy recipe and can be modified with whatever you like or have in the house. the base is 3 ingredients (mashed banana, oats and nuts). i got it from here and just used pecans in place of walnuts and threw in chocolate chips.
happy baking! it's gonna be in the 60s while i'm here! it's crazy seeing dirt and grass, haha. oh, and i love how road hazards are so relative by state. in NH they will warn for bumps and frost heaves (that would wreck your car) while driving home and in MD there was a sign warning me of a "dip" which was barely noticeable. haha
